Mediterranean Shrimp Bake
  • 2lbs of Shrimp
  • 1/2 cup Feta
  • 1/3 cup Kalamata Olives 
  • 6-7 Roma Tomatoes
  • 1 can Artichoke Hearts
  • Salt, Pepper, Oregano, Lemon
  • Olive Oil
-Preheat oven to 400 degrees
-Slice tomatoes and lay them in bottom of 9x13 baking dish
-Drizzle with olive oil, sprinkle with spices and bake for 8-10 minutes
-Top tomatoes with mixture of shrimp, feta, olives and artichokes
-Bake until bubbling hot, about 15 minutes
-Can enjoy over noodles, couscous, brown rice or savor the dish alone
