Zoodle Pasta Salad
- 3 Zucchini
- 1 Cucumber
- 1 Can Artichokes
- 2 Cups Tomatoes
- 1 Cup Black Olives
For Dressing:
- 1/2 Cup of Olive Oil
- Juice from 1 lemon
- 1/4 Cup of Red Wine Vinegar
- 1 tsp of Dried Oregano
- 1 tsp Dried Basil
- Salt & Pepper to taste
- 2 tbl of Crumbled Feta Cheese
-Make Zoodles with Spiralizer
-Cut up cucumber and tomatoes
-Combine dressing ingredients in bowl and whisk to emulsify
-Mix together all ingredients and toss with dressing immediately prior to serving
**Adding dressing too soon can make zoodles mushy

Zucchini: A great substitute for pasta to cut down on carbohydrates (for diabetics) and also reduce calories. A cup of zucchini is only 21 calories, which is significantly less compared to the 294 calories in a cup pasta. Zucchini is also rich in Vitamin C and manganese which help with removing free radicals from the body.
