Zoodle Pasta Salad




  • 3 Zucchini
  • 1 Cucumber
  • 1 Can Artichokes
  • 2 Cups Tomatoes
  • 1 Cup Black Olives

For Dressing:
  • 1/2 Cup of Olive Oil
  • Juice from 1 lemon
  • 1/4 Cup of Red Wine Vinegar
  • 1 tsp of Dried Oregano
  • 1 tsp Dried Basil
  • Salt & Pepper to taste
  • 2 tbl of Crumbled Feta Cheese


-Make Zoodles with Spiralizer 
-Cut up cucumber and tomatoes
-Combine dressing ingredients in bowl and whisk to emulsify
-Mix together all ingredients and toss with dressing immediately prior to serving
**Adding dressing too soon can make zoodles mushy

A cup of zucchini is only 21 calories, which is significantly less compared to the 294 calories in a cup pasta. Zucchini is also rich in Vitamin C and manganese which help with removing free radicals from the body.
