Rabbit Food

Carrot Bread

  • 3 cups of Oat Flour (Easily made by blending oats in blender)
  • 1/2 cup Granulated Sugar or Sweetener
  • 1 1/2 cup Coconut Milk
  • 1 1/2 Tbl Baking Soda
  • 1 pinch of Sea Salt
  • 1/3 cup Finely Grated Carrots
  • 2 Eggs
  • 1 tsp Vanilla
  • 1/2 cup Peanut Butter melted
  • 1/4 cup Chopped Walnuts
  • 1/4 cup Coconut Flakes

-Preheat oven to 350 degrees
-Spray Bundt or 9x9 pan with non-stick spray
-In a small bowl whisk together milk, eggs, vanilla
-In a large bowl mix dry ingredients
-Add liquids into dry and stir until well mixed
-Pour in melted peanut butter
-Fold in carrots, coconut, and walnuts
-Pour batter into pan and bake for 25-35 minutes
-Remove from oven and allow to cool
-Top with coconut, carrots and walnuts
