Thai Noodle Salad

Thai Noodle Salad
  • Thai Rice Noodles
  • Cucumber
  • Carrots
  • 1-2 Jalapeños 
  • Fresh Bean Sprouts
  • 3-4 Green Onions
  • Cilantro
  • 2-3 Limes
  • Crushed Red Pepper Flakes
For Dressing:
  • 1/2 cup Rice Vinager
  • 1/2 cup Olive Oil
  • 1 Lime juiced
  • 1tsp Grated Ginger
  • 2 tsp Cilantro Finely Chopped
  • 1 tbl Crushed Red Pepper 
-Cook rice noodles in boiling water for 2-3 minutes or until barely tender to bite
-Rinse noodles well to prevent them sticking together
-With spiralizer, turn cucumber into "noodles"
-Chop up jalapeños, green onions and cilantro
-Mix all salad ingredients into large bowl
-Squeeze lime juice over salad
-Whisk together dressing ingredients and pour over salad if serving immediately, otherwise store in jar until ready to serve salad
