Saved by the Bell...pepper


Delicious Stuffed Bell Peppers 

  • Five Bell Peppers with the seeds removed
  • Five eggs
  • Spinach
  • 1/2 onion chopped
  • Cherry tomatoes chopped
- Preheat oven to 400 degrees.
- Cut the lids off of the peppers and remove the seeds
-Bake the peppers for 15 minutes
-While peppers are baking, chop half an onion and cherry tomatoes
-Stuff the peppers with onion, tomatoes, and spinach
-Crack one egg on the top of each pepper
-Bake fore 20 more minutes 
-Serve warm with salsa on the side
-Enjoy!
