Cold Soup?!?

Gazpacho


All the Ingredients

  • 2 pounds of ripe seeded tomatoes
  • 3 seedless cucumbers peeled
  • 2 cloves of garlic
  • 1 orange or red bell pepper seeded
  • 1/2 of a yellow onion
  • 1 jalapeno seeded
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon sherry
  • 1 tablespoon white wine vinegar
  • Salt and black pepper to taste
Chop, Chop, Chop









-Seed the tomatoes, pepper and jalapeno
-Roughly chop tomatoes, cucumbers, pepper, onion and jalapeno
-Add the tomatoes, cucumbers, garlic, pepper, onion, jalapeno, sherry and vinegar into a blender
Blend!!
-Blend the mixture until smooth
-Drizzle in olive oil and blend well
-Add salt and  black pepper to taste
-Place into bowl and cover 
-Let chill for at least an hour
-Serve cold!
