Cold Soup?!?
Gazpacho
- 2 pounds of ripe seeded tomatoes
 - 3 seedless cucumbers peeled
 - 2 cloves of garlic
 - 1 orange or red bell pepper seeded
 - 1/2 of a yellow onion
 - 1 jalapeno seeded
 - 1/4 cup extra-virgin olive oil
 - 1 tablespoon sherry
 - 1 tablespoon white wine vinegar
 - Salt and black pepper to taste
 
-Roughly chop tomatoes, cucumbers, pepper, onion and jalapeno
-Add the tomatoes, cucumbers, garlic, pepper, onion, jalapeno, sherry and vinegar into a blender
-Add salt and  black pepper to taste
-Place into bowl and cover 
-Let chill for at least an hour
-Let chill for at least an hour
-Serve cold!
