Cilantro Lime Meatballs

Cilantro Lime Meatballs

  • 1lbs Ground Chicken Breast
  • 2 Cups Grated Zucchini 
  • 4-6 Green Onions Diced
  • 4-5 Tbls Cilantro Minced
  • 2 Tbls Garlic
  • Salt and Pepper to taste
  • Olive Oil
-Preheat oven to 400 degrees
-Drizzle baking sheet with olive oil
-Toss all ingredients together
-Scoop meatballs onto sheet
-Drizzle with olive oil
-Bake 20-25 minutes
-Can 2-3 broil to brown tops
-Serve with your favorite dip: salsa, guacamole, queso


Making meatballs is a good way to control portions. One serving size of meat is 3 ounces... about the size of your palm or about 3-4 meatballs depending on how large you make them.
