 Thai Coconut Soup

  • 1lb Chicken Breasts
  • 2 quarts Chicken Broth
  • 1 Lemon
  • 3 Limes
  • 3 Shallots
  • 1 Small Ginger Root
  • 1 Jalapeno 
  • 1 can Coconut Milk
  • 3-4 cups of Mushrooms
  • 1 Red Bell Pepper
  • 1-2 cups Carrots
  • 2 Green Onions
  • 2-3 tbls Finely Chopped Cilantro

-In large pot mix broth, lemon zest, diced shallots, grated ginger root and chopped jalapeƱo 
-Bring to a boil, then lower temperature to medium heat and let broth simmer for 15-20 min 
-Strain the broth
-Slice chicken into 1 inch pieces
-Add Chicken, coconut milk, cut red pepper, quartered mushrooms, carrots (cut into coins or shredded), chopped green onion, halved limes and cilantro into pot
-Cover and allow soup to simmer over medium-high heat until chicken fully cooked, about 20-25 minutes
-Garnish with cilantro, lime and sliced jalapeƱos
