Creamy Without The Cow

"Creamy" Cauliflower and Radish Soup



  • 1 head of cauliflower chopped
  • 1 bag of radishes chopped
  • 1 32oz container of  Low Sodium chicken or vegetable broth
  • Salt, pepper, olive oil to taste


-Preheat oven to 400 degrees
-Sprinkle vegetables with olive oil, salt and pepper
-Roast vegetables for 30 minutes
-Place vegetables in a large pot and add in broth
-Bring mixture to a boil then reduce to simmer
-Blend in blender or with an immersion blender until smooth
-Enjoy!
